Hairspray Could Help Us Find Advanced Alien Civilizations

And light pollution measures and energy saving says that the streetlighting we've had for a mere fraction of a galactic second (i.e. a couple of hundred years) won't be here in that same fraction again.

Hell, as it is, we try to reduce the amount of light that goes somewhere unnecessary (e.g. the sky!) or that is produced and doesn't do anything. There are already countries and cities with lighting that's dynamic based on the cars rolling over it (which means the signal is even HARDER to find, even if you knew what you were looking for).

And in terms of the stretch of a civilisation, lighting visible even from orbit, let alone the other side of the galaxy, is literally a tiny flicker that you'll only catch if you're constantly listening to EXACTLY that, in EXACTLY the right place for a few billion years.

Hell, it's hard enough to see all of Earth's artificial lighting from orbit if there is cloud cover, let alone from somewhere like where Voyager currently is, and as you got further out the inverse square law solves the problem nicely to give you a probability of anyone detecting it tending rather swiftly towards zero.

If you want to detect a civilisation, about the only sensible thing to do is ignore the planets, look at the stars. Because sources of energy that huge, that well light-up, that stable, that predictable and, with suitable technology, even harvestable (I believe it's called a Dyson sphere) are likely to be something that won't stop being a commodity for a long time and activity on them will be inherently visible (even if that's by one-day disappearing entirely).

Think to yourself. I plonk you down into the universe at an unknown point and at an unknown time since the Big Bang. I give you a billion-year-long-life (sound a lot? It's not). How do you find someone who's had the same done to them? The chances are you're not even going to be able to see each other, would never be at the right stages at the right times to communicate with each other before moving onto the "next most advanced / obvious method of communication", and even if you do by some chance talk be too far away or your communication too "out of date" to do anything useful with it.

Until you can quite literally bend space and visit other places, it's all a bit pointless to be looking because of simple physical laws. And by the time you *can* do that, it's easier to just plonk a sensor on every star system with your space bending techniques than it would be to ever listen out for them all.

We are quite literally talking about how to detect a particular mayfly of interest on an entire planet of activity. And by the time we do it, that mayfly has evolved to build its own space program and buggered off deeper into the galaxy anyway.

In times like these where interest rates are next to nought, it is a thankless task trying to accrue interest from money sat in bank accounts.?

Art, like property, has always been highly regarded as a far greater prospect to invest your money in.?Time and again this has been proven in the London Art Market and it is always an eye opener to see which art is going to be suddenly reassessed to become the next big thing.

I can remember when I visited Sotheby?s in 1995 during the last recession, Modern British art was going through the doldrums and the work of several big name artists could be picked up very reasonably at auction. John Bratby (1928-1992) one time Blackheath resident is a case in point. A prolific ?kitchen sink? artist, noted for depicting such humble domestic subjects as well as lavatories, he courted the press in his day and was as notorious a figure in the 50?s as Damien Hirst or Tracey Emin is today. I saw paintings by him sell under the hammer for a few hundred pounds, including a cracking self portrait I wish in hindsight I had bought when I had the opportunity.

Charles Saatchi then surprised the art world by buying three very large works from the late 50?s by Bratby from a London dealer in 2003 to display in a dedicated room in his then new County Hall Gallery. This caused something of a ripple effect in the revision of Bratby?s reputation and prices, which had taken a knock since the 1960?s invasion of the American Abstract Expressionists and the new wave of British Pop Art.?Now his work can sell for anywhere between five to fifty thousand pounds plus from London dealers.

My experience in dealing in fine art and antiques for over twenty years has led me to some wonderful finds. On leaving school I went into the family business, The Mount Antiques in Whitby, Yorkshire, where I learnt the art of buying from my mother as I accompanied her to auctions and house calls.?She trained as a textile designer and had a great eye for decorative art and antiques, building an international reputation over twenty years for her emporium on the north east coast.?I then went to college to study both art practice and the history of art.

When I came to London I joined Harrods Antiques and Fine Art Department for several years and went on to work as an art consultant in contemporary art to GX Gallery in Camberwell. I have continued to exhibit my own work in London and open my studio each year in Brockley since moving there.

Undoubtedly as part of the recession and in line with the growing number of markets, both farmers food and craft based, the public are enjoying and demanding something of a renaissance in rediscovering small local trade and commercial premises.

The White Room SE4, is the new home of modern women?s wear label, NC23 by a local designer keen to encourage networking and collaboration in the boutique/studio/workshop also on Brockley Road. They plan to offer workshops in sewing, pattern cutting, tailoring and drawing, the first of which is Make a Swing Skirt in 3 hours. This couldn?t be more fitting flanked as it is by a resurgence of vintage style coffee shops selling cupcakes in the area.

The Wendy's College Classic: U of R Women set the tone

The Wendy's College Classic is local college basketball at its best. The classic tips off Tuesday night featuring the men's and women's teams from eight area college.

The University of Rochester women are seven-time defending champions of The Wendy's College Classic. And despite a promising start to the season last year, the Lady YellowJackets fell flat. Now is their chance to set a new tone.

It's a week in the fall Jim Scheible always looks forward to, and why not, for the past seven seasons his Lady YellowJackets have won the longest in-season college basketball tournament in the nation.

Jim Scheible, University of Rochester Women's Head Basketball Coach, said, ?Whenever you bring all the teams together its incentive to win and winning it brings the college basketball community together.?

The University of Rochester have topped The Wendy's Classic and are seven time defending champions. But the veteran coach wants his team to remember how last season ended. After starting 17-0 and ranked 5th in the nation with a sure shot at the NCAA tournament, U of R lost six of its final eight games and missed the tournament for the first time in seven years.

Jackie Walker, senior, said, ? It was hard a rough ending. We don't want to repeat. We have the motivation, we are treating this step by step and hone in on each opponent and shutting them down.?

Amy Woods, senior, said, ?Definitely motivating. We worked hard all off season. We are taking it one by one and hopefully we will be successful.?

In sports, taking a step back often leads to a giant step forward. Scheibel is counting on it, making a statement this week is a good start, but his team is eyeing the postseason prize and he doesn't want them to lose sight of it.

Scheibel said, ?I don't think we took it for granted and you have to keep playing if you play you keep playing like it's the first time for all these players.?

Court orders new look at health care challenge

(AP) ? The Supreme Court has revived a Christian college's challenge to President Barack Obama's healthcare overhaul, with the acquiescence of the Obama administration.

The court on Monday ordered the federal appeals court in Richmond, Va., to consider the claim by Liberty University in Lynchburg, Va., that Obama's health care law violates the school's religious freedoms.

A federal district judge rejected Liberty's claims, and the 4th U.S. Circuit Court of Appeals ruled that the lawsuit was premature and never dealt with the substance of the school's arguments. The Supreme Court upheld the health care law in June.

The justices used lawsuits filed by 26 states and the National Federation of Independent Business to uphold the health care law by a 5-4 vote, then rejected all other pending appeals, including Liberty's.

The school made a new filing with the court over the summer to argue that its claims should be fully evaluated in light of the high court decision. The administration said it did not oppose Liberty's request.

Liberty is challenging both the requirement that most individuals obtain health insurance or pay a penalty, and a separate provision requiring many employers to offer health insurance to their workers.

The appeals court could ask the government and the college for new legal briefs to assess the effect of the Supreme Court ruling on Liberty's claims before rendering a decision.

Liberty's case joins dozens of other pending lawsuits over health reform, many involving the requirement that employer insurance plans cover contraception, which are working their way through the federal court system.

The case is Liberty University v. Geithner, 11-438.

BlackRock hires Blackstone trio for European infrastructure debt push

The three-strong team ? who have worked together for more than 10 years, latterly at Blackstone?s GSO division ? will invest in investment grade infrastructure debt investments secured by transportation, social infrastructure and regulated utilities assets.

BlackRock will also seek to buy performing infrastructure single loans and loan portfolios from de-leveraging bank with infrastructure assets.

Benaroya and Wrenn will jointly head up the London-based European Infrastructure Debt investment unit, which falls within BlackRock?s Alternative Investors (BAI).

Once BlackRock has established a track record, the global fund manager will eventually seek to raise an third party capital for a multi-investor European infrastructure fund.

BlackRock is looking to establish a scalable business over time and will consider investments in France, Germany, the Benelux countries, the UK as well as euro-denominated Scandanavian assets, over five to 25 years on both a fixed and floating rate basis.

Given the flexibility of investments sought, within investment graded parameters, margins will vary but a guidance of at least 300 basis points over either EURIBOR, LIBOR or the relevant gilt benchmark is indicated.

BlackRock said the new focus for the global asset manager is in response to institutional client demand to channel capital into new build infrastructure projects and secondary loan investments in a search for increased yield amid a low interest rate environment.

The low correlation to other asset classes is expected to increase the appeal of infrastructure debt to traditional liability-matching fixed income investors.

Matthew Botein, head of BAI, said: ?Investors are looking for increased yield, and to exploit new investment opportunities resulting from global de-leveraging.

?We expect to see a continuation in the robust growth in the infrastructure market.?

Botein said the OECD estimates market size at US$3 trn by 2018 and $50trn by 2030, and alternative investments have doubled as a proportion of the institutional investment market in the last seven years.

He added: ?Hiring this team is an exciting and significant development which helps us develop this burgeoning market and adds a first-mover advantage to BlackRock?s current service provision in Europe.?

Benaroyn and Wrenn join as managing directors co-head of European Infrastructure Debt, while Lengaigne joins as director. Benaroyn has 18 years of infrastructure and project finance experience, while Wren has worked in infrastructure and structured finance for over 25 years and Lengaigne?s experience totals a decade.

David Lomas, head of BlackRock?s Global Financial Institutions Group, said: ?This new platform is the right service at the right time. Use of stem cells in personalized medicine

ScienceDaily (Nov. 26, 2012) ? Johns Hopkins researchers report concrete steps in the use of human stem cells to test how diseased cells respond to drugs. Their success highlights a pathway toward faster, cheaper drug development for some genetic illnesses, as well as the ability to pre-test a therapy's safety and effectiveness on cultured clones of a patient's own cells.

The project, described in an article published November 25 on the website of the journal Nature Biotechnology, began several years ago, when Gabsang Lee, D.V.M., Ph.D., an assistant professor at the Johns Hopkins University School of Medicine's Institute for Cell Engineering, was a postdoctoral fellow at Sloan-Kettering Institute in New York. To see if induced pluripotent stem cells (iPSCs) could be used to make specialized disease cells for quick and easy drug testing, Lee and his colleagues extracted cells from the skin of a person with a rare genetic disease called Riley-Day syndrome, chosen because it affects only one type of nerve cell that is difficult if not impossible to extract directly from a traditional biopsy. These traits made Riley-Day an ideal candidate for alternative ways of generating cells for study.

In a so-called "proof of concept" experiment, the researchers biochemically reprogrammed the skin cells from the patient to form iPSCs, which can grow into any cell type in the body. The team then induced the iPSCs to grow into nerve cells. "Because we could study the nerve cells directly, we could for the first time see exactly what was going wrong in this disease," says Lee. Some symptoms of Riley-Day syndrome are insensitivity to pain, episodes of vomiting, poor coordination and seizures; only about half of affected patients reach age 30.

In the recent research at Johns Hopkins and Memorial Sloan-Kettering, Lee and his co-workers used these same lab-grown Riley-Day nerve cells to screen about 7,000 drugs for their effects on the diseased cells. With the aid of a robot programmed to analyze the effects, the researchers quickly identified eight compounds for further testing, of which one -- SKF-86466 -- ultimately showed promise for stopping or reversing the disease process at the cellular level.

Lee says a clinical trial with SKF-86466 might not be feasible because of the small number of Riley-Day patients worldwide, but suggests that a closely related version of the compound, one that has already been approved by the U.S. Food and Drug Administration for another use, could be employed for the patients after a few tests.

The implications of the experiment reach beyond Riley-Day syndrome, however. "There are many rare, 'orphan' genetic diseases that will never be addressed through the costly current model of drug development," Lee explains. "We've shown that there may be another way forward to treat these illnesses."

Another application of the new stem cell process could be treatments tailored not only to an illness, but also to an individual patient, Lee says. That is, iPSCs could be made for a patient, then used to create a laboratory culture of, for example, pancreatic cells, in the case of a patient with type 1 diabetes. The efficacy and safety of various drugs could then be tested on the cultured cells, and doctors could use the results to help determine the best treatment. "This approach could move much of the trial-and-error process of beginning a new treatment from the patient to the petri dish, and help people to get better faster," says Lee.

Ramirez, Ph.D., Nadja Zeltner, Ph.D., Becky Liu, Constantin Radu, M.S., Bhavneet Bhinder, Hakim Djaballah, Ph.D., and Lorenz Studer, Ph.D., of the Sloan-Kettering Institute; and Hyesoo Kim, Ph.D., Young Jun Kim, M.D., Ph.D., InYoung Choi, Ph.D., and Bipasha Mukherjee-Clavin of the Johns Hopkins University School of Medicine.

A baby boomer&#39;s haven ? ?Our House Is a Very, Very, Very Fine ...

Unless you?ve moved around just about every year of your life, you?ve probably got a few things that feel like comfy old shoes. But a house? BoomerCaf? contributor Liz Kitchens thinks so, as she writes in this essay which she calls, ?Our House Is a Very, Very, Very Fine House.?

My husband and I have been running recently like crazy people. Aside from work and family activities, which by themselves could drive you crazy, we have been moving our office into our home. I underestimated what a transition this would be. My husband confessed to some anxiety about the transition, since for the past 40 years he has arisen each morning, dressed, and headed to an office. Now, considering Jim is 63, it is apparent that ?going to the office? has been the thing he has done more of in his life than literally anything else.

So while Jim and I are undergoing this transition in our lives, and we realize that Jim has been in the same routine for decades, a thought has popped into my head? and that thought is, So is my house! I have lived in the same house for 30 years this fall. I say this with a tad bit of chagrin as I fear being regarded as the ?old lady? on my street, much as I viewed a few of my neighbors that way the day I moved onto Choctaw Trail. At the time, I was pregnant with my son, who is now in his final year of a Ph.D. program and engaged to be married.

Perhaps I?m feeling a bit nostalgic, even sentimental as I ponder my home and all it has housed in the last 30 years. It has?

  • Welcomed home a new baby
  • Cared for my dying mother
  • Welcomed my husband and his son, absorbing their belongings and all the emotions accompanying the blending of families
  • Endured the joys and tribulations of teenagers transitioning into adults
  • Transformed into a kind of commune during a sabbatical taken my grad student son, his fiance?, and Labradoodle

Liz?s home.

And now it is absorbing the relics of yet another transition (desks, awards, office supplies?) as we move toward working ?virtually? in our new home offices. In the season of Thanksgiving, I?m realizing one of the things I feel grateful for is my home. My home, with its roof and its walls, has provided shelter and sanctuary to my family and me.

People often tell me my house looks like a folk art museum with all the color and funky art adorning its walls. But a quality I think I value the most is my home?s elasticity, as it has expanded and contracted, welcoming and saying farewell to the various stages of our lives.

Professor finds profiling in ads for personal data website

LAS VEGAS (Reuters) - Dr. Latisha Smith, an expert in decompression sicknesses afflicting deep sea divers, has cleared criminal background checks throughout her medical career. Yet someone searching the Web for the Washington State physician might well come across an Internet ad suggesting she may have an arrest record.

"Latisha Smith, arrested?" reads one such advertisement.

Another says: "Latisha Smith Truth... Check Latisha Smith's Arrests."

Instantcheckmate.com, which labels itself the "Internet's leading authority on background checks," placed both ads. A statistical analysis of the company's advertising has found it has disproportionately used ad copy including the word "arrested" for black-identifying names, even when a person has no arrest record.

Latanya Sweeney is a Harvard University professor of government with a doctorate in computer science. After learning that her own name had popped up in an "arrested?" ad when a colleague was searching for one of her academic publications, she ran more than 120,000 searches for names primarily given to either black or white children, testing ads delivered for 2,400 real names 50 times each. (The author of this story is a Harvard University fellow collaborating with Professor Sweeney on a book about the business of personal data.)

Ebony Jefferson, for example, often turns up an instantcheckmate.com ad reading: "Ebony Jefferson, arrested?" but an ad triggered by a search for Emily Jefferson would read: "We found Emily Jefferson." Searches for randomly chosen black-identifying names such as Deshawn Williams, Latisha Smith or Latanya Smith often produced the "arrested?" headline or ad text with the word "arrest," whereas other less ethnic-sounding first names matched with the same surnames typically did not.

"As an African-American, I'm used to profiling like that," said Dr. Smith. "I think it's horrendous that they get away with it."

Instantcheckmate.com declined to comment. The company's founder and managing partner, Kristian Kibak, did not respond to repeated emails and phone calls over a period of several months, and other employees referred calls to management. Company officials also declined to comment when visited twice at their call center in Las Vegas. Former employees said they had signed nondisclosure agreements that barred them from speaking openly about Instant Checkmate.

Instantcheckmate.com is one of many data brokers that use and sell data for a variety of purposes. The field is attracting growing attention, both from government and consumers concerned about possible abuse. Rapid advances in technology have opened up all sorts of opportunities for commercialization of data.

Anyone can set up shop and sell arrest records as long as they stay clear of U.S. legal limitations such as using the information to determine creditworthiness, insurance or job suitability.

Companies that compete with instantcheckmate.com include intelius.com and mylife.com. An examination of Internet advertising starting last March as well as Sweeney's study did not find any rival companies advertising background searches on individual names along racial lines.

WHO CAN BE TRUSTED?

In its own marketing, Instantcheckmate.com sums up its mission like this: "Parents will no longer need to wonder about whether their neighbors, friends, home day care providers, a former spouse's new love interest or preschool providers can be trusted to care for their children responsibly."

According to preliminary findings of Professor Sweeney's research, searches of names assigned primarily to black babies, such as Tyrone, Darnell, Ebony and Latisha, generated "arrest" in the instantcheckmate.com ad copy between 75 percent and 96 percent of the time. Names assigned at birth primarily to whites, such as Geoffrey, Brett, Kristen and Anne, led to more neutral copy, with the word "arrest" appearing between zero and 9 percent of the time.

A few names fell outside of these patterns: Brad, a name predominantly given to white babies, produced an ad with the word "arrest" 62 percent to 65 percent of the time. Sweeney found that ads appear regardless of whether the name has an arrest record attached to it.

Blacks make up about 13 percent of the U.S. population but account for 28 percent of the arrests listed on the FBI's most recent annual crime statistics.

Internet advertising based on millions of name pairs has only existed in recent years, so targeting ads along racial lines raises new legal questions. Experts say the Federal Trade Commission, which this year assessed an $800,000 penalty against personal data site Spokeo.com for different reasons (related to the use of data for job-vetting purposes), would be the institution best placed to review Instant Checkmate's practices.

The FTC enforces regulations against unfair or deceptive business practices. A deceptive claim that would be more likely to get people to purchase a product than they would otherwise would be a typical reason the FTC might act against a company, said one FTC official who did not want to be identified. For example, authorities could take action against a firm that makes misleading claims suggesting a product such as records exist when they do not.

"It's disturbing," Julie Brill, an FTC commissioner, said of Instant Checkmate's advertising. "I don't know if it's illegal ... It's something that we'd need to study to see if any enforcement action is needed."

Instant Checkmate's Kibak, who is in his late 20s, works out of a San Diego office near the Pacific Ocean. The son of a California biology professor, he did not respond to repeated phone calls and emails seeking comment about his business.

"We would consider the answers to most of your questions trade secrets and therefore would not be comfortable disclosing that information," Joey Rocco, Kibak's partner according to the firm's Nevada state registration, said in an email.

Instant Checkmate LLC maintains its official corporate headquarters at an address in an industrial zone across the highway from the Las Vegas strip. At the back of a long parking lot, the company shares a warehouse building with an auto repair shop. At one end, a large roll-up garage-style door opens to the company's call center. Workers face a gray cinder-block wall, their backs to the entrance. Staff declined to answer questions.

DATA FIRMS PROLIFERATE

Professor Sweeney's analysis found that some instantcheckmate.com ads hint at arrest records when the firm's database has no record of any arrest for that name, as is the case with her own name. In other cases, such as that of Latisha Smith, the company does have arrest records for some people by that name, although not for the doctor of hypobaric medicine in Washington State.

Laura Beatty, an Internet Marketing Inc expert in helping companies achieve prominent placement in Web searches, said instantcheckmate.com appeared to choose its ads based on combinations of thousands of different first and last names and then segment them based on the first names.

"There does look like there is some definite profiling going on here," she said. "In the searches that I looked at, it seemed like the more Midwestern- and WASP-sounding the name was, the less likely it was to have either any advertisement at all or to have something that was more geared around the arrest or criminal background."

Internet firms selling criminal records and personal data to the public have proliferated in recent years, as low-cost computing enables even modest operations to maintain large databases on millions of Americans. Such sites sell access to users for a one-time fee - $29.95 in the case of instantcheckmate.com - or via monthly subscription plans.

Instant Checkmate, first registered in Nevada in 2010, said in a recent press release posted online that the firm had attracted more than 570,000 customers since its start and counted more than 200,000 subscribers.

According to alexa.com, an Amazon.Com Inc site analyzing website traffic, instantcheckmate.com has ranged roughly between the 500th and 600th most visited U.S. site in recent weeks, making it an increasingly major player in this area.

The company is able to target its ads on an individual name basis through a program called Google AdWords. Instantcheckmate.com and others companies like it use Google AdWords to bid to place small text advertisements alongside search results on major websites triggered by the names in their data base. Such ads typically cost a company far less than a dollar, sometimes just a few pennies, each time they're clicked.

Google says it does not control what names appear in AdWords. "Advertisers select all of their keywords, and ads are triggered when someone searches for that name. We don't have any role in the advertiser's selection of unique proper names," said a Google spokesman.

Some in Congress have raised concerns about developments in the use of personal data. In October, Senator John Rockefeller IV, a Democrat from West Virginia and chairman of the Senate Committee on Commerce, Science and Transportation, opened a probe into leading data brokers. "Collecting, storing and selling information about Americans raises all types of questions that require careful scrutiny," he said.

Guest Post: Spaghetti al Nero di Seppia | The Hungry Australian

Sometime last year I came across a fellow Adelaide blog called A Kitchen for Friends as it?s publisher, one Justin Chai, published a post in which he said some nice things about this blog.

Later, Justin and his lovely girlfriend, Janice, came along to an Adelaide Food Bloggers Group meet up at the Adelaide Showgrounds Farmers Market. Justin (and Janice) were exactly as they came across in Justin?s blog ? friendly, down-to-earth, enthusiastic and passionate about food.
?
Since that early meeting Justin and Janice have started catering parties and are even doing the canap?s for a wedding in December. It started innocently enough ? Justin offered to throw a work colleagues? daughter a 3-course 21st birthday dinner ? but then other people started asking them to cater their gatherings and who knows where it will end. It?s all very exciting and I?m thrilled for them.
?
So when I knew I was going to be having a very busy October/November, I asked Justin if he?d like to do a guest post for The Hungry Australian. It?s a little later than we both expected (sorry Justin!) but I?m delighted to now hand him the reins so he can share some memories of his recent trip to Venice and a very interesting pasta dish with us.

From traditional eateries nestled within its coastal towns to unassuming trattorias hidden away in the maze of alleyways sprawled out across its bustling cities, almost every food stop we made in Italy left us with d?j? vu of other blissful culinary experiences in Italy.

The Venetian island of Burano houses more than just its iconic rainbow-coloured buildings and beautiful laces. Populated by a tightly knit community which continues to live of the cornucopia of ocean bounty, it is of no surprise that the locals here treat their seafood with the utmost care and respect.
?
But one particular Venetian food establishment and the humble creation it birthed from the confines of its age-old kitchen well-deserves a written piece of its own.
?
The?Trattoria da Romano?is a perfect example of such a culture. Even?Anthony Bourdain?himself sings its praises in one of the many travel destinations he covers on his?No Reservations?television series. Of course we ordered the highly recommended ?Go? fish risotto: perfectly cooked rice grains in a milky white broth which seemed to just burst with heavenly flavours of the sea!
?
But if the risotto was analogous to?yin, may I then introduce you to its?yang, its black brotha? from another motha??
?
Friends, meet the?Spaghetti al Nero di Seppia!
?

So what exactly is it? Well, do you remember the last time you saw a David Attenborough documentary on sea creatures? Remember seeing a squid doing what looked like an underwater fart ? releasing black clouds all over a poor shark which just wanted lunch? That?s right people, we ate all of that black goo?
?
?And boy was it good! As I licked my fork, spoon, plate, fingers ? well, just about anything which came into contact with that rather unflattering yet simply delectable pasta ? I looked around the table to my travel companions and knew right away that our thoughts were as coherent as ever.
?
How could we possibly go back to Australian pasta after eating this?!!!
?
It was presented in such a simple manner yet it was so rich in flavour! It somewhat frustrated me because I just could not comprehend how they could make it taste so good when there seemed to be so little ingredients on display. But that dish at Burano left me inspired and determined to reproduce what I ate there with Australia?s very own produce. It also taught me that food does not always have to be elaborate to taste good.
?
So here?s my amateur take on producing simplicity on a plate!
Spaghetti del Nero di Seppi

Recipe type: Main

Author: Justin Chai, A Kitchen for Friends

Prep time: 20 mins

Cook time: 30 mins

Total time: 30 mins

Serves: 4

Pasta with squid ink ? a goth looking pasta with all the flavours of the sea!

  • 5 garlic cloves
  • 1 red onion
  • 1/2 bunch flat leaf parsley leaves
  • 2 bird?s eye chillies
  • 400g whole prawns (raw)
  • 500g whole squid
  • Squid ink (from ink sac)
  • EVOO
  • 1 cup of dry white wine
  • 3 tbsp tomato paste
  • 400g tomato puree
  • 500g cooked spaghetti
  1. Finely dice the garlic cloves, red onion and parsley leaves.
  2. De-seed the birds-eye chillies and finely dice them as well
  3. De-shell and de-vein the fresh prawns.
  4. Place the prawn shells and heads in small pot, fill it with just enough water to cover the shells and bring it to a gentle boil. Once the stock begins to boil, lower the gas and allow it to simmer for 20-30 minutes.
  5. Now on to the daunting (and messy!) task of cleaning, prepping ? well basically, giving a total make-over to one of the cephalopod family?s many ugly members. We?re going to try keeping the task as clean as possible, but don?t test your luck ? you might want to replace that white t-shirt pronto.
  6. Start off by pulling the head and tentacles portion off from the body.
  7. Now, carefully remove the ink sac in one piece from innards.
  8. Bring the sac to the kitchen sink (trust me on this one), gently puncture the sac and empty the ink into a small bowl filled with 20ml of water.
  9. Beware of sneaky squirts! Squeeze and squeeze with all your might people, because we will need every drop of that blackish goodness to give our pasta some character!
  10. Cut across the head, separating the tentacles as a whole. Discard those horrid looking eyeballs and any innards you may find.
  11. Using a sharp knife, slice through the wings and separate them from the body.
  12. Slide your finger underneath the purplish skin lining its body and wings, peel it off and discard.
  13. Remove backbone from the tube.
  14. Using a long spoon, scrape and discard more gooey innards out of the tube.
  15. Give all the different squid parts a thorough wash.
  16. Slice the tubular body into 1 cm rings, the wings and tentacles in bite-sized pieces and set aside.
  17. With all the prep work done, time to bring on the heat!
  18. Start off by lining a pan with a few splashes of extra virgin olive oil over low to medium heat.
  19. Saut? the combination of finely diced onions and garlic until the onions appear translucent ? releasing that inviting aroma we all love.
  20. Turn up the gas to medium and deglaze the pan with a cup of dry white wine.
  21. Allow things to simmer, eventually reducing the liquid down to 1/3 of the original amount.
  22. Now, add approximately 400ml of the prawn stock you made earlier to the pan followed by the finely diced chilies, tomato paste and puree.
  23. Next comes the squid pieces and all that sea goodness from its ink!
  24. Mix everything around to incorporate.
  25. Bring the liquid up to a gentle simmer and then allow it to reduce to a viscous consistency. Patience is key here. You don?t want the sauce to be too runny. Rather, the task here is to rid of at least 2/3 of the sauce?s water content ? retaining the essence of flavour in the medium which will coat our pasta. You?ll thank me later.
  26. Once the right consistency has been achieved, add in the prawns ? being really careful not to overcook them. 1-2 minutes should suffice.
  27. Throw in half the chopped up parsley leaves, reserving the rest when you plate up.
  28. Season with sea salt and black pepper (although you shouldn?t have to do much of it because the natural seafood flavours from the prawn and squid will be sure to boldly make themselves known to your palate.)
  29. Now all that?s left is to mix it all up with your favourite pasta (good ol? spaghetti will suit it pretty well) and serve it up to your soon to be goth-looking friends!

Pope elevates 6 cardinals to choose successor

VATICAN CITY (AP) ? Six new cardinals are joining the elite club of churchmen who will elect the next pope, bringing a more geographically diverse mix into the European-dominated College of Cardinals.

Pope Benedict XVI will formally elevate the six at a ceremony Saturday, bestowing red hats and gold rings on prelates from Colombia, India, Lebanon, Nigeria, the Philippines and U.S.

In explaining his choices for this "little consistory," Benedict said he was essentially completing his last cardinal-making ceremony held in February, when he elevated 22 cardinals, the vast majority of them European archbishops and Vatican bureaucrats.

The six new cardinals "show that the church is the church of all peoples and speaks in all languages," Benedict said last month. "It's not the church of one continent, but a universal church."

That said, the College of Cardinals remains heavily European even with the new additions: Of the 120 cardinals under age 80 and thus eligible to vote in a conclave to elect a new pope, more than half ? 62 ? are European. Critics have complained that the College of Cardinals no longer represents the church, since Catholicism is growing in Asia and Africa but is in crisis in much of Europe.

With the new additions, the College of Cardinals is a tad more multinational: Latin America, which boasts half of the world's Catholics, now has 21 voting-age cardinals; North America, 14; Africa, 11; Asia, 11; and Oceana, one.

Among the six new cardinals is Archbishop James Harvey, the American prefect of the papal household. As prefect, Harvey was the direct superior of the pope's former butler, Paolo Gabriele, who is serving an 18 month prison sentence in a Vatican jail for stealing the pope's private papers and leaking them to a reporter in the greatest Vatican security breach in modern times.

The Vatican spokesman has denied Harvey, 63, is leaving because of the scandal. But on the day the pope announced Harvey would be made cardinal, he also said he would leave the Vatican to take up duties as the archpriest of one of the Vatican's four Roman basilicas. Such a face-saving promotion-removal is not an uncommon Vatican personnel move.

Harvey's departure has led to much speculation about who would replace him in the delicate job of organizing the pope's daily schedule and arranging audiences.

Aside from Harvey, the new cardinals are: Abuja, Nigeria Archbishop John Olorunfemi Onaiyekan; Bogota, Colombia Archbishop Ruben Salazar Gomez; Manila, Philippines Archbishop Luis Antonio Tagle; Patriarch of Antioch of the Maronites in Lebanon, His Beatitude Bechara Boutros Rai; and the major Archbishop of the Trivandrum of the Siro-Malankaresi in India, His Beatitude Baselios Cleemis Thottunkal.

Cardinals serve as the pope's closest advisers, but their main task is to elect a new pope.

The six new cardinals are all under age 80. Their nominations bring the number of voting-age cardinals to 120, 67 of whom were named by Benedict, all but ensuring that his successor will be chosen from a group of like-minded prelates.

Saturday's consistory marks the first time in decades that not a single European or Italian has been made a cardinal ? a statistic that has not gone unnoticed in Italy. Italy still has the lions' share of cardinals, though, with 28 voting-age "princes" of the church.

Early start to "Black Friday" shopping frenzy

NEW YORK/CHICAGO (Reuters) - The shopping frenzy known as "Black Friday" kicked off at a more civilized hour, with shoppers welcoming decisions by retailers such as Target Corp and Toys R Us Inc to move their openings to Thursday night.

They also seemed to show little concern that the U.S. economy could be pushed over a "fiscal cliff," if a combination of tax hikes and spending cuts take effect in January. Some economists fear that could lead to another recession.

Yet the National Retail Federation expects sales during the holiday season to grow 4.1 percent this year.

The stakes are high for U.S. retailers, who can earn more than one-third of their annual sales and 40 to 50 percent of their profits during the holiday season, which generally starts with Black Friday.

"I think spending is better for the economy. I think you should spend. If you save all your money that will only make it worse," said Saiful Islam, 21, a New York accounting student who stood in line at Best Buy to purchase a variety of gadgets. "The line is bad, but the deals are good."

According to a Reuters/Ipsos poll, two-thirds of shoppers were planning to spend the same amount of money as last year or were unsure about plans, while 21 percent intended to spend less, and 11 percent planned to spend more.

"I definitely have more money this year," said Amy Balser, 26, at the head of the line outside the Best Buy store in the Mall of America in Bloomington, Minnesota. "I definitely don't think (the economy) has bounced back anywhere near as much as it needs to, but I see some improvement," she said.

While younger people like Balser generally said they felt comfortable spending money, those who are retired or close to it seemed to be more cautious.

Retired stockbroker Jack Connoly, 65, stood idly while his wife Mary tried on clothes at a Macy's in New York.

"Oh, we're spending less this year, whatever Mary says. Look at the stock market. If they don't do a deal on the debt by the end of December it's bye bye stock portfolio. We're being cautious," he said.

STARTING EARLY

Across the country, store lines were long - in the hundreds or more in many places - though the move toward earlier opening hours appeared to have helped. By sunrise on Friday, it was commonplace, even at large stores in the major cities, to find many more staffers than shoppers.

While the shift was denounced by store employees and traditionalists because it pulled people away from families on the U.S. Thanksgiving holiday, many shoppers welcomed the chance to shop before midnight or in the early morning hours.

"I think it's better earlier. People are crazier later at midnight," said Renee Ruhl, 52, a hotel worker, at a Target store in Orlando, Florida, where she was already heading to her car with an air hockey game in her shopping cart 2-1/2 hours before the chain opened last year.

Others were not as happy with an earlier Black Friday. A petition asking Target to "save Thanksgiving" had 371,606 supporters as of Thursday afternoon.

Some workers used the day to send a message.

OUR Walmart - a coalition of current and former Wal-Mart staff seeking better wages, benefits and working conditions - has staged months of protests outside stores and targeted "Black Friday" for action across the country.

In Chicago, four busloads of protesters, including some Walmart workers, showed up at a store on the city's South Side for a 7 a.m. protest. The crowd chanted "Walmart, Walmart you're no good, treat your workers like you should!" though their activities did not appear to deter shoppers.

Rosetta Brown, who has been with the company for 15 years and works at the Sam's Club store in Cicero, Illinois, took part in the protest and lamented how employees are treated now versus in the days of company founder Sam Walton.

"Sam Walton was a good man ... Walmart passed away with him," she said.

HIGH STAKES

The National Retail Federation said 147 million people would shop Friday through Sunday, when deals are at their most eye-catching - down from 152 million the same weekend last year.

Wal-Mart Stores Inc's U.S. discount stores, which have been open on Thanksgiving since 1988, offered some "Black Friday" deals at 8 p.m. on Thursday and special deals on certain electronics, like Apple Inc iPads, at 10 p.m.

The earlier hours lured people who had not braved the crowds before on Black Friday, said Jason Buechel, a senior executive in the retail practice of consultancy Accenture, in observing mall activity.

At Macy's in Herald Square in Manhattan, the line at the Estee Lauder counter was four deep shortly after its midnight opening. The cosmetics department's "morning specials" included free high-definition headphones with any fragrance purchase of $75 or more, and a set of six eye shadows for $10.

But for some people, cheap wasn't cheap enough - like the Macy's shopper who bought Calvin Klein shoes at 50 percent off but was not satisfied.

"I was hoping for deeper discounts," said Melissa Glascow, 35, a Brooklyn, New York, waitress who added she was saving her money for online discounts.

At the Target on Elston Avenue on Chicago's Northwest side - known as one of the highest-volume stores in the chain - the $25 Dirt Devil vacuum that normally goes for $39.99 was sold out, though there were still several large televisions available.

At 2 a.m. CST (0800 GMT), Mall of America was poised to beat the record number of shoppers - 217,000 - that came on the same day last year, according to mall spokesman Dan Jasper.

The day is also a test for retailers shifting strategies, like J. C. Penney Co Inc, which has been suffering from plunging sales as it moves away from coupons toward lower pricing and specialized boutiques within stores.

Amina Kebbeh, 18, of the Bronx, New York, was on line for the 6 a.m. EDT (1100 GMT) opening of Penney's Manhattan store. Others stood with her, though the line was relatively tame.

"If they remove the coupons, no one is eager to come," she said.

Some shoppers also faulted the chain's decision not to open in the wee hours, like Christian Alcantara, 18, who visited the store in the Elmhurst section of Queens, New York, and suggested it cost the retailer money.

"They should open earlier. I've been everywhere else and I've already shopped," he said.

(AP) ? China has enraged several neighbors with a few dashes on a map, printed in its newly revised passports, that show it staking its claim on the entire South China Sea and even Taiwan.

Inside the new passports, an outline of China printed in the upper left corner includes Taiwan and the sea, hemmed in by the dashes. The change highlights China's longstanding claim on the South China Sea in its entirety, though parts of the waters also are claimed by the Philippines, Vietnam, Taiwan, Brunei and Malaysia.

China's official maps have long included Taiwan and the South China Sea as Chinese territory, but the act of including those in its passports could be seen as a provocation since it would require other nations to tacitly endorse those claims by affixing their official seals to the documents.

Ruling party and opposition lawmakers alike condemned the map in Taiwan, a self-governed island that split from China after a civil war in 1949. They said it could harm the warming ties the historic rivals have enjoyed since Ma Ying-jeou became president 4 1/2 years ago.

"This is total ignorance of reality and only provokes disputes," said Taiwan's Mainland Affairs Council, the Cabinet-level body responsible for ties with Beijing. The council said the government cannot accept the map.

Philippine Foreign Secretary Albert del Rosario told reporters in Manila that he sent a note to the Chinese Embassy that his country "strongly protests" the image. He said China's claims include an area that is "clearly part of the Philippines' territory and maritime domain."

The Vietnamese government said it had also sent a diplomatic note to the Chinese Embassy in Hanoi, demanding that Beijing remove the "erroneous content" printed in the passport.

In Beijing, the Foreign Ministry said the new passport was issued based on international standards. China began issuing new versions of its passports to include electronic chips on May 15, though criticism cropped up only this week.

"The outline map of China on the passport is not directed against any particular country," Foreign Ministry spokeswoman Hua Chunying said Thursday.

It's unclear whether other South China Sea neighbors will respond in any way beyond protesting to Beijing. China, in a territorial dispute with India, once stapled visas into passports to avoid stamping them. Taiwan does not recognize China's passports in any case; Chinese visitors to the island have a special travel document.

China maintains it has ancient claims to all of the South China Sea, despite much of it being within the exclusive economic zones of Southeast Asian neighbors. The islands and waters are potentially rich in oil and gas.

There are concerns that the disputes could escalate into violence. China and the Philippines had a tense maritime standoff at a shoal west of the main Philippine island of Luzon early this year.

The United States, which has said it takes no sides in the territorial spats but that it considers ensuring safe maritime traffic in the waters to be in its national interest, has backed a call for a "code of conduct" to prevent clashes in the disputed territories. But it remains unclear if and when China will sit down with rival claimants to draft such a legally binding nonaggression pact.

The Philippines, Brunei, Malaysia and Vietnam are scheduled to meet Dec. 12 to discuss claims in the South China Sea and the role of China.
