This week I came across an article about ?the food words we?ve all been saying wrong?. While I did know how to pronounce quinoa and gnocchi, I had no idea ?pho? is pronounced as ?fur?. Or ?a?ai? as? ?ah-sigh-ee?. To check out all tough to pronounce food and drink words, read the article here.

While I used paccari (pah-caaree? pahcah-ree?) for this week?s recipe, you can substitute rigatoni (ree-gah-tony) or even penne (peh-neh). Let?s just call this pasta though, no mispronouncing possible.

This is a lovely, easy to prepare pasta dish. Perfect for warmer summer evenings and also a great vegetarian recipe. The combination of spinach and ricotta is of course a classic one. In this recipe, the spinach is saut?ed with some garlic, onion and spicy chili first to give this dish an extra kick.

Adding some grated lemon zest at the end really lifts the creamy flavor of the ricotta.

I love the texture and taste of ricotta in this pasta, but you could use soft crumbled goat cheese for a tangy variation.?Be sure to use plenty of salt and pepper and finish with an extra drizzle of good olive oil.

Pasta with Spicy Spinach & Ricotta

Ingredients

  • 10,5 oz (300 gr.) paccari, rigatoni or penne pasta
  • 1 onion
  • 2 cloves of garlic
  • 1 chili pepper, seeds removed
  • 2 tablespoons olive oil, plus extra for drizzling
  • 21 oz (600 gr.) spinach
  • 6 heaping tablespoons of ricotta
  • salt and pepper, to taste

Instructions

  1. Cook the pasta (in water with salt) according to package directions. Drain well.
  2. Meanwhile, finely chop the onion, garlic and red pepper.
  3. Heat the olive oil in a pan and fry the onion, garlic and pepper until the onion is translucent.
  4. Then add the spinach in batches. Sautee for about 3 minutes on low heat, or until all spinach is wilted. Season with plenty of salt and pepper.
  5. Add the cooked pasta and half of the ricotta. Mix well.
  6. Finish with the rest of the ricotta, some grated lemon zest and a drizzle of olive oil.
